The Last Of The Winter Risotto At Burdock & Co. On Main

This wintry, earthy risotto from Burdock & Co. on Main Street – made with Agassiz rice, black trumpet mushrooms, and cauliflower before being finished with a gruyere-ish Heidi cheese – may seem a little out of place given all the sunshine we’ve been enjoying of late, but it was had in the chill of evening and so seemed totally and seasonally appropriate. Truly, with winter having taken it so easy on us this year, and with only 12 days of it remaining (!), we were thrilled to honour its exit by the forkful. The vegetarian risotto is still on the menu ($15), so get on it while you still can.
