Vancouver, BC | Already celebrated for its broad selection of note-worthy wines, UVA Wine Bar has refined its name to UVA Wine & Cocktail Bar as a nod to Bar Manager Lauren Mote’s renewed focus on creating a truly unique cocktail experience at the downtown hotspot.

Mote, a prominent mixologist, international spirits diplomat and bartender who boasts more than 15 years of experience behind the bar in both Toronto and Vancouver, has custom-designed an eclectic, clever and inventive cocktail menu that has helped position UVA as a trendsetter on the Vancouver cocktail scene.

“This name change is a reflection of the next generation of UVA and a testament to Lauren’s enthusiasm and determination in developing a truly world-class cocktail program over the eight short months she has been here,” said General Manager and Wine Director Robert Stelmachuk. “Lauren has been a one-of-a-kind addition to our team, and her cocktail list follows suit.”

Aficionados of the grape need not worry — UVA’s extensive list of fine wines remains in the skilled hands of Stelmachuk, a certified sommelier with more than 25 years of experience in the industry who maintains a sharp focus on championing small-production, boutique wines. Stelmachuk is currently pursuing his Master Sommelier designation with the Court of Master Sommeliers, which is often regarded as the ultimate professional credential a sommelier can attain.

“While my focus has been on reinvigorating an already popular cocktail program at UVA, Robert has been a stellar chaperone of a first-rate wine program,” says Mote, who is also co-proprietor of Bittered Sling, a retail line of high-quality culinary bitters and cocktail extracts. “Our by-the-glass wine program allows Robert to offer a diverse range of styles, including limited production and hard-to-find wines, while celebrating various winemaking regions around the globe.”

Mote and Stelmachuk’s meticulous curation of UVA’s array of cocktails, wine and craft beer options provides the ideal accompaniment to Executive Chef Faizal Kassam’s palate-pleasing lunch and dinner offerings, allowing the unique daily and weekly menus to take centre stage.

UVA’s “Time Out” menu is a regular daily feature from 2 to 6 p.m. that offers patrons a choice of Mote’s one-of-a-kind cocktail creations — such as Maleficent (Bombay Sapphire gin, vermouth, cherry liqueur, orange and juniper bitters); Yuzu Bastard (Bacardi eight-year-old rum, yuzu citrus juice, Punt e Mes vermouth, Cointreau, shanghai rhubarb syrup, Denman bitters); and Mrs. Bucket (Grey Goose vodka, Pimm’s No. 1, ginger and rhubarb, citrus, zingiber crabapple bitters) — paired with an antipasti selection that includes steamed mussels or fresh pacific oysters, crispy halibut cheeks, bruschetta or grilled chorizo for $18 per person.

UVA’s busy social schedule also features a weekly Bounce & Brass Southern Jazz Series every Saturday, powered by the 1930s cabaret stylings of The James Danderfer Trio, as well as Social Sundays, featuring buck-a-shuck oysters all day, seasonal cocktails for $10 each, and wine and beer specials.
