FINE DINING SERVERS

We are seeking ambassadors to welcome our guests to Old Vines Restaurant and guide them through an incredible fine dining culinary and wine experience. Servers are responsible for offering menu suggestions, wine pairing, and communicating all dietary requests and allergies in an effective manner to the Culinary Brigade. Servers are to ensure guests leave Old Vines Restaurant completely satisfied and eager to return.

Applicants must have previous experience serving in a fast paced, restaurant setting, with above average wine knowledge, WSET Level2 or equivalent. Fine dining experience preferred, technical service and wine service skills required. Above average food knowledge and general cooking techniques knowledge is required.

Applicants must have natural communication skills and a genuine desire to please our guests. Please note: this position is a full time, casual position.

SEASONAL RESTAURANT OFFICE ADMINISTRATOR

This position will be responsible for completing and submit daily cash outs, administrational tasks such as payroll, menu printing, file organization and comment cards. The Office Administrator will also administer the tip pool system, respond to guest inquiries, telephone & email reservations, and prepare daily, weekly, monthly sales and labor tracking reports. This position will report to both Service Manager and Culinary Director and work on tasks related to both front of house service and back of house culinary functions.

The ideal candidate must have 1-2 years previous food & beverage experience with a preference given to server or floor experience, if not in a similar administrational role. They must have strong organizational and administration skills and have a natural passion for customer service and practice an exacting attention to detail. This position is available April through mid-October.

RESTAURANT SERVICE MANAGER

We are seeking a talented individual to join our team in the role of Old Vines Restaurant Service Manager reporting to the Culinary Director/Winery Chef.

The Service Manager will be responsible for the front of house service team; Servers, Hosts, Bussers and Management team of Old Vines Restaurant. In collaboration with the Culinary Director/Winery Chef, the Service Manager will ensure each guest receives an excellent experience while visiting Old Vines Restaurant. The Service Manager will further be responsible for leading the front of house management team of Old Vines Restaurant and ensuring we achieve Quails’ Gates operational and financial goals.

Our successful applicant will be a natural leader and have an acute passion for customer service. The candidate must also thrive in high pressure situations and have the ability to multi-task and take initiative. They must have previous hands-on technical service experience in a fine dining setting and be detail orientated and posses a positive ‘can do’ attitude. Previous experience in a Winery restaurant an asset but not required however an advanced knowledge of Food , Wine and Spirits is required.

Applicants must have a minimum of 5 years of leadership experience, preferably in a fine dining setting and posses an understanding of brand awareness, budgeting, planning, and be proficient with computers and technology, including POS systems. Applicants must have the ability to work a flexible schedule such as weekends, holidays and varied shifts based on business volumes.

SEASONAL SOUS CHEFS

For the upcoming 2014 Season we are seeking two experienced, energetic and passionate individuals to join our culinary team as Seasonal Sous Chefs. Our successful candidates will assume the support position and run the kitchen in the absence of the Executive Sous Chef and Culinary Director/Winery Chef. They will supervise the daily, nightly or special events activity of the kitchen and aide in menu planning and development, while maintaining standards of quality, cost, appeal, and flavor of the foods.

Applicants should have successfully completed a formal chef training program & have their Inter Provincial Red Seal, along with the Food Safe Level 2 Certificate. They should also have a minimum of 2+ years of experience cooking, preferably in fine dining establishments in a leadership position and demonstrate excellent saucier skills and complete understanding of meat and fish butchery.
