Vancouver, BC | You like beers? We’re making dinner – four courses, to be exact, all paired up with all the good stuff from Stanley Park Brewery. It starts with beer-inspired canapés and a custom beer cocktail; moves on to the pilsner alongside a shaved root vegetable salad with fennel, crispy egg, chili aoli, and crispy pigs ear; continues with an amber ale paired with pork and sweetbread boudin blanc, rye croutons, cauliflower puree, and sous-vide apple; plateaus with the brun up against chicken fried beef cheeks with onion beer gravy, turnip smashed potatoes, and pickled scallions; and closes with a custom brun cocktail washing down a pear beignet with vanilla ice cream beer float.
