Vancouver, BC | From October 18 to 31, MARKET by Jean-Georges will be welcoming Atlanta’s famed Cook Hall. Featuring regional American fare, updated and refined for the modern diner’s palate, Cook Hall is a fun and contemporary take on the traditional American gastropub.

Under the direction of renowned Atlanta chef David Gross, Cook Hall offers global gastropub fare with an emphasis on shareable plates of varying size. A playful take on gourmet small bites is composed of dishes like Devilled Egg with Gulf Blue Crab, Kale Caesar Salad with Crispy Egg and Parmesan and Crispy Duck Tacos with Chipotle Coleslaw. The menu highlights Gross’ passion for seasonal ingredients married with Atlanta’s southeastern inspiration.

Creating a contemporary twist on the craft cocktail movement, the restaurant has created a “bottle service” equivalent with its famous Cook Hall Cocktail Kit. Order the kit and it arrives tableside, complete with instructions, in a basket brimming with fresh herbs, gorgeous carafes of sparkling soda water, wee droppers of housemade bitters, a heaping bowl of freshly sliced fruits and a selection of from-scratch shrub syrups. For those feeling bold, diners are invited to be their own mixologist and create a personalized concoction, or follow one of Cook Hall’s celebrated recipes such as the Lavender Gin Fizz or Jalisco Flip.

The a la carte menu will be available in the dining room and the bar along with a reduced MARKET a la carte menu with Jean-Georges signature items through until the end of October.

MARKET by Jean-Georges is the first restaurant in Canada for the three-star Michelin chef Jean-Georges Vongerichten and the signature restaurant of Shangri-La Hotel, Vancouver. MARKET, open seven days a week from breakfast through dinner, is located on the hotel’s third floor and accessible through the hotel or directly off Alberni Street. THE VANCOUVER SUN – Mia Stainsby | It’s been too long since I’ve visited New York… So it was really nice of New York to come and visit me. Market at Shangri-La in Vancouver borrowed chef Anthony Ricco from New York’s Spice Market to bring some of his food here. Both restaurants are operated by Jean-Georges Vongerichten, whose name is spoken in reverential tones even in that jaded city.

We shared four à la carte dishes, plus a dessert. Shaved tuna with chili tapioca, Asian pear and lime ($14) was, if I may speak in rhyme, sublime: Petals of sashimi-grade tuna and a quenelle of tuna broth sorbet were served over a coconut kaffir lime broth. Vietnamese chicken curry ($22) featured half a chicken chopped into eight pieces in a beautiful coconut curry broth; fresh cut herbs
rained down upon it…

Ricco says he was impressed by the passionate, hard-working crew at Market. By his reckoning, this generation of New York chefs are getting a little too soft.

In Vancouver, Market impressed me once again, with casual but impeccable service. Case in point: a server saw us switching dishes and swooped in with the proper cutlery for each of us. The congenial professionalism is just right.
