Vancouver, BC | To kick off the spring season at Cibo Trattoria, Executive Chef Faizel Kassam has created a special Spring Into Lamb evening on Thursday, April 4th at 6pm. The 6-course dinner will feature lamb from Two Rivers Specialty Meats and wine pairings from Nk’Mip Cellar wines. Chef Kassam and Cibo GM Steve Edwards will welcome both Jason Pleym of Two Rivers and Randy Picton, Winemaker from Nk’MIP, to the table. Details after the jump…

The team at Cibo Trattoria has traditionally used local and organic products, flavoured with centuries old herbs and spices. This tradition continues as Chef Kassam and his brigade offer crispy lamb belly, lamb loin carpaccio, anolini with Tuscan lamb braise and roast leg of lamb as the highlights of this spring menu. Following the event on April 4th, spring lamb will continue to be showcased on the Cibo Feature Menu throughout the month of April.

Chef Kassam has said, “Linking rustic flavours and the cooking methods available in today’s kitchens is a passion for me. I enjoy creating sublime flavour profiles by using old-world herbs and seasonings with new age cooking techniques.”

At Cibo guests experience the honoured traditions and culture of Italy in a comfortable and welcoming ambience while savouring award winning rustic cuisine.
