Vancouver, BC | Executive Chef Margaret Chisholm has designed a delicious Valentine’s Menu that is easy to heat, assemble and serve in your own kitchen. Items include red endive with Riesling poached pear, Dungeness crab cake with passion fruit gelée, truffle-scented sablefish with marsala, and salted caramel cheesecake. HORS D’OEUVRE – One of each per person:
Crêpe purse stuffed with scallops, white wine and cream

Red endive with Riesling poached pear, Cambozola cheese and cracked black pepper

Smoked duck and kumquat marmalade on a crisp fruit and nut crostini

APPETIZER – Choose one:
Baby beet salad with fromage blanc tart
golden and red beets tossed with tarragon honey vinegar, shaved rainbow radishes,
frisée salad and sherry grainy mustard vinaigrette

Dungeness crab cake with passion fruit gelée
compressed cucumber mint salad, Fraser Valley salad greens, passion fruit soy vinaigrette

Pear and parsnip soup
garnished with crispy parsnip and tamarind cream

ENTRÉE – Choose one:
Braised beef short rib with Granville Island Lions Winter Ale
sherry vinegar and Manchego gremolata

Free-range chicken with pine nuts and lemon
stuffed with preserved lemon with pine nut, fresh herb salsa verde and cherry tomato confit

Sablefish with truffle essence
seared in a delicate truffle-scented flour, braised wild mushrooms and Marsala sauce

All entrées accompanied by:
Gnocchi with brown butter, fresh lemon and sage
Roasted seasonal vegetables with herb butter

DESSERT – Choose one:
Dark chocolate whiskey infused cake served with whiskey-soaked cherry sauce and mascarpone cream

Salted caramel cheesecake served with a burnt caramel orange compote

Minimum Order: Two

For ease of home preparation we recommend selecting the same menu for your entire party.

Orders must be placed by Noon on Tuesday, February 12th.

Orders may be picked up or delivered (delivery charges will apply) before 5:00 PM on Thursday, February 14th.

Food will be presented on recyclable and biodegradable/compostable platters and cookware (with cooking and/or heating instructions).

This celebrated honour is for Chef Margaret’s 14 years of leadership with our company, the community, and the culinary industry.

Culinary Capers has catered three Olympic Games. During the 2010 Winter Games in Vancouver Culinary Capers’ executed high profile Olympics events including NIKE, Coca Cola, NBC, Royal Bank of Canada, Shaw Communications and Sochi 2014 Russian House. The company was chosen as the exclusive caterer for the BC Canada Pavilion in Beijing and for BC Canada Place during the Winter Olympics in Torino, Italy.

Excited about the opportunity for growth in the Beijing market the company opened a sister company – Culinary Capers Beijing in 2008. In 2010, they were the recipient of two international awards for a spectacular four-course luncheon for 120 guests on the Great Wall of China. Also in 2010, Culinary Capers Beijing opened SWITCH!, which offers the same fresh modern cuisine that has allowed Culinary Capers to garner an international reputation, only in a restaurant setting.
