Vancouver, BC | With the season of golden trees, crisp cool air and new fall fashions approaching, so are the next three Regional Dinners at Vancouver’s very own internationally acclaimed and award-winning Cibo Trattoria. The Regional Dinner Series at Cibo have really become popular with true Italian cooking enthusiasts. Each dinner is carefully planned and prepared monthly by Executive Chef Neil Taylor to cater to a specific geographical region in Italy. Each four course dinner represents the culture, ingredients and rich history of traditional meals from the region highlighted for the month. In September, Cibo features the Tuscany Dinner on Wednesday, September 21st from 5pm into the late evening. Tuscany marks the divide between the richer European style cooking of the North and the simpler, lighter, more Mediterranean style cooking of the south. Tuscan olive oil is a defining factor along with the beef and chickens that are produced here, being some of the best in Italy. Pasta is less prominent in Tuscan cuisine, being replaced by bread based soups. Vegetables are exceptional especially artichokes, cannellini beans, borlotti beans, zucchini, chard and tomatoes.

The Tuscany Dinner menu created by Executive Chef Neil Taylor features:

Chicken liver Toscana with housemade pickles and bruschetta
“Pici”- Tuscan style spaghetti with pork ragu, san marzano tomatoes, chil, basil and pecorino
Roast chicken with “panzanelle salad”- heirloom tomatoes, roast peppers,
walla walla onions, celery, anchovy, bread and chianti vinegar
Roast local peaches, almonds, vin santo and crème fraiche

Four course dinner with Chardonnay isle e olena, Sassicaia, Solaia, Vin Santo wine pairings for $149

October’s Regional Dinner highlights beautiful Umbria. This naturally beautiful landlocked region of central Italy is rich in history and culture. It is known for its meat and game, especially nut fed pork, lamb, wild boar, hare and game birds. Umbrian fresh and cured pork products are renowned throughout Italy with porchetta (roasted stuffed pig) originating here. Legendary black truffles from Norcia, wild trout from the River Nera, lentils from Castelluccio and excellent sheep’s milk pecorino are some of the regions notable foodstuffs. Cibo’s Umbria Dinner will be help Wednesday October 12th from 5pm into the late evening. The menu will be finalized and revealed closer to the date in order to use the freshest ingredients in-season.

The Fall finale will be the Lombardy Dinner on Wednesday, November 9th from 5pm into the late evening. Stretching from the Alps in the north to the River Po in the south this region has a rich in agriculture and cuisine. Romans, Lombards, Spanish, Austrians and French have all ruled here in the past, each group influencing the cuisine. Agriculturally, Lombardy is grain country. Rice used to make risotto is flavored with all manner of ingredients, including oxtail, marrow, pumpkin, sausage, quail, lake fish and frogs that abound in the rice paddies of the Po Valley. Some of Italy’s most renowned cheese are produced here including; Gorgonzola, Grana Padano, Mascarpone, Robiola and Tallegio. A large proportion of Italy’s fruit is grown in Lombardy including cherries, pears, figs and apricots.
