DINER: Chocolate Lovers Ready To Pounce As “Thierry” Opening Imminent On Alberni…

by Andrew Morrison | Renowned chocolatier-pâtissier Thierry Busset and Top Table are on the verge of opening Thierry, the highly anticipated shop/atelier at 1059 Alberni. Local sweets and pastry fanatics have been waiting for this for well over a year now, so this is very welcome news indeed (we first reported on this back in April of 2010).

They will open the doors to public within the next few days. An official announcement will likely follow by the end of the week.

The design was done by Marc Bricault, the same fellow responsible for the stunning wine room at Blue Water Cafe and the recent makeovers of Araxi and CinCin. The tiny space features clean, modern lines and will sport both indoor and outdoor seating. “The shop will realize a longtime dream of mine,” Busset says. “Everything will be made on the premises and we will work in the style of the atelier, with our work space open to the retail area.” Everything will be hand-crafted every day using only the best ingredients.

If you’re not all that familiar with Busset, Gordon Ramsay called him “one of the finest pastry chefs in the world.” He toiled under famed chocolatier Bernard Sicard in Auvergne, at Pilati Patisserie in the Loire, and as pastry chef at London’s Le Gavroche and Marco Pierre White – both boasting three Michelin stars. In Vancouver, he wowed us first at West and has been flooring us since with his creations at CinCin for as long as I can remember. This man is a national treasure, so expect nothing less than the absolute best.

Several photos of the shop’s wares and a couple of interior details (so as not to give the whole show away) after the leap. See you in line!

  1. I remember flying out a chef from France some years back who we were interviewing for LMB/Century, he had a 2 michelin star background, tremendously passionate and culinary skills that blew our mind. His first phone call when arriving was to his old friend Thierry, who he claimed was the best pastry chef he’d worked with across the pond.

I can’t help but anticipate the next reality food show. .. Chocolate Wars !with Thierry vs Thomas, that’s a crossfire I wouldn’t mind getting caught in.

    Congrats Thierry

Reverence, Respect, and Realization: What The Acorn Taught Me

At 21 years old, I'm still just a kid and relatively new to working in restaurants, but I grew up umbilically tied to the hospitality industry. My father was a food writer, and my mother is a photographer. Their careers meant that most of my early years were spent in kitchens and dining rooms instead of on playgrounds and soccer fields; consequently, I learned my table manners before I could count past one hundred.
