Chef de Cuisine – Edible at the Market

DESCRIPTION

Lead the culinary team to develop and execute an exciting culinary operation showcasing the best of BC and Canada. You will oversee the day-to-day operations, train and supervise staff, liaise with the front of house team and monitor food quality.

GENERAL JOB FUNCTIONS

– Select, train and supervise kitchen staff in the proper preparation of menu items, equipment and safety measures.

– Evaluate performance; give guidance and discipline as necessary to promote quality products.

– Visually inspect, select and use only the freshest fruits, vegetables, meats, fish, fowl and other food products of the highest standard in the preparation of all menu items.

– Observe production flow and make adjustments in order to adhere to control procedures for cost and quality.

– Monitor to ensure proper receiving, storage and rotation of food products so as to comply with health department regulations.

– Write, maintain and update all menu specifications, recipes and pictures, production forecasts, and ensure same are being followed.

– Check to see that all equipment in the kitchen is clean and in proper working condition.

– Schedule culinary staff so that proper coverage is maintained while keeping payroll costs in line.

– Perform other duties as required, i.e. special orders, company events, etc.

– Ensure menus for events, specials, holidays are completed as needed.

– Supervise daily cleaning and inventory of walk-in, storage and refrigerators.

– Communicate and assist the management team in creating innovative products and services.

– Perform property and department accounting procedures.

– Order products needed to support kitchen operations.

REQUIRED JOB KNOWLEDGE, SKILLS AND ABILITIES

– Requires excellent English communication skills, both verbal and written.

– Must possess proficient computer skills, including Word and Excel.

– Thorough knowledge of food products, standard recipes and proper preparation.

– Ability to analyze, forecast data, and make judgments to ensure proper payroll and production control.

– Ability to prioritize, supervise large and diverse staff and accomplish goals on a timely basis.

– Working knowledge of laws governing equal employment opportunity and civil rights, occupational safety and health, wage and hour issues, and labor relations.

MINIMUM QUALIFICATION STANDARDS

– Red Seal Chef’s Papers

– Minimum three years experience as a Sous Chef in a high-volume operation,

– restaurant or resort. Candidates with experience in an Executive Chef or

– Chef De Cuisine role are preferred

– Food Safe Level II

Front of House Manager – Edible at the Market

DESCRIPTION

Lead the front of house team to develop and execute an exciting and enticing culinary operation showcasing the best of BC and Canada. You will oversee the day-to-day operations, train and supervise staff, liaise with the Chef de Cuisine and culinary team and monitor guest experience.

GENERAL JOB FUNCTIONS

– Contribute to the overall strategic restaurant goals, initiatives and objectives with a true visionary leadership

– Demonstrate strategic initiatives at Edible at the Market to ensure positive growth in all measurable areas

– Work with team on local and national marketing plans and pricing strategies

– Develop strong relationships within Granville Island by participating in community events

– Direct the annual restaurant strategic planning process, operating budget and annual marketing plan; and monitor the performance throughout the year

– Oversee the recruitment of new team members, departmental orientation and training plan

– Oversee daily operations of the Restaurant, demo dining kitchen as well as the take-away area

– Ensure that proper liquor controls are in place and are being adhered to

– Maximize productivity through budgeting, scheduling and cost controls

– Conduct regular employee development reviews

REQUIRED JOB KNOWLEDGE, SKILLS AND ABILITIES

Education/ Experience:

– A University or College degree in Hotel and Restaurant Management/Business Administration is considered an asset

– Extensive operational experience in restaurant management, including but not limited to: sales and marketing, human resources, budget management

– A demonstrated passion for Farm to Table and local products

– Familiarity with BC and Canadian food and beverages

Skills:

– Strong leadership skills

– Excellent English communication skills, both verbal and written

– Proficient computer skills, including Word and Excel

– Creative and innovative marketing skills

– Attention to detail

– Panning, prioritizing, delegating and organizational ability

– Accounting knowledge

Working Conditions

Will be required to work a variety of shifts including days, nights, weekends and holidays
