Vancouver, BC | George  Lounge, the Godfather of Vancouver’s thriving cocktail culture, is pleased to welcome Timothy Schofield as Lounge Manager effective immediately. Tim looks forward to fostering an environment at George where bar talent continues to thrive, improving the guest experience, and continuing George’s reign as the place to go for London cocktails, Vancouver style.

He certainly has the credentials to make his mark at Vancouver’s ultra lounge. Whilst presiding over some of London’s hottest cocktail bars, including 22Below, Top of the Pops “The Star Bar”, and Teatro Members Lounge he also wrote and published The Bar Industry Guide, a definitive guide to setting up a cocktail bar. He moved to Vancouver in 2008 and has managed at Nu Restaurant & Lounge, as well as FigMint.

Having worked at London’s The Star Bar, known as the ultimate Green Room, and associated with the BBC’s Top of the Pops show, Tim has made drinks for some big names in entertainment including Elton John, Pink, Gary Numan, Hugh Heffner, and many more. He’s also brushed shoulders with A-list celebrities at the private members-only club Teatro and wasn’t afraid to call across the bar to ask Victoria Beckham, better known as Posh Spice, to get off her cell phone as they were not permitted in the club. Everyone’s treated equally after all. At 22 Below Tim is very proud to have been part of the team when it won Timeout magazine’s coveted awards for Best for Cocktails and Best new Bar in 2005.

Now happily settled in Vancouver with his wife, a local gal, and their daughter, Tim shares his recipe for Bourbon & the Bees.

Bourbon & the Bees

1 1/2 oz Woodford Reserve
1/2 oz Navan Liqueur
1 Stoney Paradise plum
1 squeeze Fresh lemon juice

Garnish
Plum Fan
Honey stick rolled in toasted bee pollen

Method

Toast bee pollen. Peel, then muddle the plum in a cocktail shaker filled with ice. Add Bourbon and Navan Liqueur. Add a squeeze of fresh lemon juice. Shake then strain into Old Fashioned glass filled with cracked ice. Garnish with a plum fan and a honey stick rolled in toasted bee pollen.
