Kelowna, BC | Spring and asparagus are an inseparable pair and it appears a cause for real celebration. If you Google ‘asparagus recipes’, a whopping 3,230,000 recipes are at your fingertips. Poems are written about it, grown men dress up in asparagus costumes to signal the season and there is even a Kick “ass”pargus fun/run held in Michigan. Asparagus is celebrated around the world with festivals in Qatar, South Africa, California, Germany and now Chef Butters at RauDZ Regional Table in Kelowna is honouring this inspirational sign of spring with an Asparagus Celebration of his own.

A leader in the Okanagan for serving fresh, local produce year round, Chef Butters wanted to
create his own event in the restaurant to celebrate this incredible vegetable. Over the course of
the short season he will serve more than 1000 lbs of asparagus, all from Duggan Farms in
Winfield. Duggan Farms is one of the dozens of small family farms that provides produce to the
restaurant. And they focus on one singular ingredient…asparagus.

This versatile vegetable is not strictly a side dish in this celebration but is the featured ingredient
in a range of Chef Butters’ seasonal creations. Long considered a wine-challenged ingredient,
co-owner and WSET graduate, Audrey Surrao, has paired each of the featured asparagus dishes
with local wines, challenging usual convention by pairing the green spear with different varietals
including Hester Creek Merlot, and Van Westen Vineyards, “Vino” Grigio.

RauDZ Regional Table will be celebrating the asparagus of Duggan Farms while the season
lasts. So drop by with your asparagus poem, or even in your asparagus costume and we’ll all
celebrate the arrival of spring produce with this delicious ingredient. “You know, when you get your first asparagus, or your first acorn squash, or your first really good tomato of the season, those are the moments that define the cook’s year.
