Boulud Hires Sebastien Le Goff – Ed Perrow To Run Uva & Cibo

Sebastien Le Goff is on his way out at Cibo Trattoria and Uva Wine Bar in the Moda Hotel. Word is he’s headed to the Far East to open the new 120 seat DB Bistro Moderne in Singapore’s $5.5 billion Marina Bay Sands project. We offer him our sincere congratulations and wish him the very best. It sucks that we’re losing one of the top front of house pros of our generation, but here’s hoping he’ll be back one day to open a place of his own.

Stepping into his big shoes at Cibo and Uva will be the very capable and well-liked Ed Perrow. Perrow is best known in the city for his long-time tenure as Gord Martin’s operations man at Bin 941 and Bin 942. He most recently shepherded the opening of Davie’s popular La Brasserie.

    Sebastien’s departure is a huge loss for Vancouver, the man’s one-of-a-kind.

    I can’t think of anyone better suited to grab the reigns of Uva/Cibo than Ed. Much respect. The guy thrives in cozy, amiable rooms.
