Like this article from Alice Waters, the Dan Barber piece is also quite interesting. I recall a restaurant in Lisbon a couple of years ago a portuguese mother removing flesh expertly from the bone of a whole roasted Sea Bream, push the head & skeleton to the side of the plate & then allow her child to enjoy a perfectly fresh, beautifully cooked fish. IMHO the education of the young is central & knowing how to cook with fresh (ideally local) ingredients crucial in providing recognition & understanding, & thereby give meaning & value to that which sustains us body & soul. Canadian food labelling standards need to be improved too.
