George Ultra Lounge is the Godfather of Vancouver’s cocktail culture. Modeled in the London style, George pioneered the cocktail kitchen concept in Canada when it opened in 2005. Shaun Layton, George Ultra Lounge’s award-winning head bartender, is a local guy with international cocktail connections. As Cityfood publisher Rhonda May summarized, “every time I hear Shaun’s name he’s won another award.” Since joining George in January 2008 Shaun has brought home several trophies including the title of 2008 Iron Mixologist in Giffard’s 2nd Annual Iron Mixologist Challenge for his La Belle Poire cocktail, and first place in Bombay Sapphire’s national Cocktails by Design mixology challenge, which he won with his creation, London Vine. Other notable awards include silvers in the Grey Goose BC Competition (2008); Effen Vodka’s Vancouver competition (2008); and Maker’s Mark bourbon cocktail competition with his Loretto Process (2009); and a George team bronze in the Sagatiba Cachaca’s Battle of the Bars (2008).
