Sean Heather’s Gastown Empire Scores A New Executive Chef

Sean Heather's Gastown restaurants acquire Lee Humphries

Sean Heather has picked up Cornwallian chef Lee Humphries off waivers after the talented young cook sent himself adrift from FigMint last month (along with everyone else at that beleaguered restaurant – Ops manager Mike Mitchell is now at Chambar and GM Tim Schofield is now at Nu).

Humphries will be the executive chef for all of Heather’s Gastown restaurants, overseeing the food programs at Salt Tasting Room, Shebeen Whiskey House, Irish Heather GastroPub and Salty Tongue Café, aswell as his new project, a Spanish-inspired tapas restaurant next door to Salt in Blood Alley that is due this September.

Humphries trained in the UK before moving to Vancouver a decade ago. He worked under the David Hawksworth regime at West for two years, graduating as sous chef. Then came a lengthy stint as chef de cuisine at Elixir in the Opus Hotel under the masterful Don Letendre, followed by his premiere, three year turn as an exec at FigMint.

  2. I remember Lee when we 1st started at the Westbury in London in 1997.
    Lee was a very good friend of mine and even attended his wedding in BC,i miss him dearly but i am also glad to see his achievement and well deserved success.
